I’m excited to try out this blueberry tea cake recipe for myself after tasting my mother’s version a number of times now. Perfect for a Sunday brunch or a weeknight dessert, this is just one of the recipes I look forward to when I go home for the weekend. Like most recipes I try, I’m sure this tea cake will never taste as good as my mom’s version, but its worth a try nonetheless.
Berry Blue Tea Cake

2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter or margarine
3/4 cup sugar
1 egg, beaten
1/2 cup milk
2 cups bluberries
Topping
1/4 cup sugar
2 tablespoons flour
1/4 teaspoon cinnamon
2 tablespoons butter or margarine
Sift together dry ingredients. Cream butter; gradually beat in sugar. Add egg and milk; beat until smooth. Add dry ingredients; fold in blueberries. Pour into greased and floured 9-inch square pan.
For topping, mix sugar, flour and cinnamon. Cut in butter until crumbly. Sprinkle topping over dough. Bake at 375 degrees for 40 to 45 minutes.
