Birthdays mean cake, right? Well not for a cookie lover. I’m always up for a new challenge and when it came time to make a birthday cake for someone who prefers the cookie, I wanted to ensure that this homemade version was just as tasty as the greasy goodness that is the store-bought cookie cake. After searching through a number of recipes I settled on Martha. After all, she never fails. This recipe was actually for a layered cookie cake, but worked for the giant version as well. This was also my first experience piping letters on a cake…Let’s just say I hope to go up from here. The recipe makes more than enough for a pizza pan size cookie cake. I used the extra dough for cookies for my roommates.

Giant Chocolate Chip Cookie Cake

4 cups all-purpose flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons salt
6 tablespoons unsalted butter, softened
1 1/2 cups packed light brown sugar
3/4 cup granulated sugar
3 teaspoons pure vanilla extract
2 large eggs, plus 2 egg yolks
3/4 cup heavy cream
3 cups semisweet chocolate chips

Preheat oven to 350 degrees. Whisk flour, baking soda, and salt in a medium bowl. Put butter and brown and granulated sugars into mixer bowl; mix on medium until pale and fluffy. Mix in vanilla, eggs, and yolks. Reduce speed to low. Add flour mixture in 2 batches, alternating with the cream. Stir in chocolate chips. Bake for 20 minutes or until golden brown.
