How to ruin a perfectly good batch of pumpkin scones

You want to know something funny about these pumpkin spice scones?

I threw them in the trash shortly after taking these photos.

Why? Because pumpkin is the spice of life people. Well, specifically, cinnamon, ginger, nutmeg and cloves are the actual spices of life in the fall but you get the idea.

Truth is, these just didn’t have enough spice. And shame on me for not following my own recipe and trusting a pumpkin spice blend from anywhere other than Penzey’s to give me the proper amount of spice to my pumpkin.

I think the lesson we all learned in this experiment (or that I learned so you don’t have to) is not to substitute when it comes to baking, and especially when it comes to those fragrant little spices that fill your kitchen with autumn awesomeness.

The good news is, unlike my batch, I have a recipe that won’t let you down. Just believe me when I say you should take the time to individually mix your spices and not rely on a shortcut spice blend, even if it does come from a reputable organic store that rhymes with bader moes.

Pumpkin Spice Scones with Pumpkin Glaze

  • 2 C flour
  • 1/3 C brown sugar
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 C unsalted butter, cut into chunks
  • 1/2 C pure pumpkin
  • 1 egg
  • 3 TBL milk
  • 2 tsp vanilla

Preheat oven to 400 degrees.

In a large mixing bowl, whisk flour, brown sugar, spices, baking soda, banking powder and salt. Cut butter into dry mixture.

In another bowl, whisk pumpkin, egg, milk and vanilla.

Add wet ingredients into dry and mix until combined.

Press into flat circle about 1 inch thick. Cut into 8 large triangles and place on a prepared baking sheet.

Cook for 10-12 minutes or until firm.

In a small bowl, mix 1/2 C powdered sugar with 1/4 tsp cinnamon, 1/4 tsp cloves, 1/4 tsp ginger and 2 TBL milk.

Once scones are cool, ice with spiced glaze.

Do it right and you won’t dare throw these things anywhere but into your belly.

Sometimes I feel like that guy you went on a first date with and afterwards he says you should hang out again soon but then you don’t hear from him for two-plus weeks. And you’re probably over there on the other end of your computer or smart phone like what the heck? I thought we hit it off?

Should I shoot over a random text that says I’m interested without saying I’m interested. You know something like, “hey.” A simple reminder that you’re waiting for an update, but not desperately waiting, just you know, waiting.

Meanwhile that guy you’re dating (me in this case) actually really wants to hang out with you again but keeps getting sidetracked by work, work events and events for work and hasn’t gotten around to making the necessary efforts to plan your next date.

OR, this is just my really roundabout way of telling you that I’m sorry I keep going AWOL from the blog. I miss you and I’ll try to be better. And better I’ll be because today marks the start of the best season ever created once a year every year from now until eternity.

I’ll try not to repeat my annual reminder post about how obsessed every girl everywhere is with the fall season as I’m sure the amount of blanket scarves, over the knee boots and PSL snaps and instagrams you’ve seen today are reminder enough.

Instead, I’d like to use this time to revisit my baking of the inaugural batch of pumpkin apple muffins, a task just a wee bit more challenging to get motivated for when it’s still 90 degrees outside and you’ve already showered but can’t stop sweating from your run.

So without further ado. Give me all the pumpkin!

Pumpkin Apple Muffins with Streusel Topping (makes 18-24)

  • 1 C unsweetened canned pumpkin
  • 2 large eggs
  • 1/2 C vegetable oil
  • 2 C peeled and chopped apples (I used honeycrisp)
  • 2 1/2 C flour (I used half whole wheat, half all-purpose)
  • 2 C sugar
  • 1 TBL pumpkin pie spice mix (cloves, ginger, cinnamon and nutmeg)
  • 1 tsp baking soda
  • 1/2 tsp salt

Streusel Topping (Because, well, Streusel)

  • 2 TBL flour
  • 1/4 C brown sugar
  • 1 TBL oats
  • 2 tsp butter

Preheat oven to 350 degrees.

In a large mixing bowl, whisk sugar, flour, baking soda, spice mix, soda and salt. Set aside.

In a stand mixer, blend pumpkin, oil and eggs together.

Add dry ingredients into wet and mix until just combined. Add apples.

Scoop into prepared muffin tins and fill about 2/3 of the way.  Top with 1 tsp streusel topping per muffin.

Bake for 30 minutes or until toothpick comes out clean.

Wedding Snapshots: the details

When it comes to wedding and party photos, I’m a sucker for detail shots. And if you’re a sucker for detail shots then we should be best friends. Which is pretty much what our photographer and I became as soon as I looked at her work and saw that she appreciated the little details just as much as I do.

There’s just something in the details. Don’t get me wrong, you may not get the same emotion with a detail shot as you do with a candid, but I love the way that the details give you a feel for the entire day. As if the theme (if there is one) is all wrapped up into a pretty little detailed package.

In search of bolognese

Today we venture south to Bologna, a medieval looking city with a center that’s more Chicago State Street than Little Italy.

Bologna is referred to in a number of ways. La Grassa (the fat one) celebrates the first bolognese sauce that originated in the city. La Dotta (the learned one) refers to the university that was founded in 1088. And La Rossa (the red one) illustrates the red terracotta medieval buildings with their miles of porticoes and apparently some left-wing politics as well. (source)

We arrived by train and after checking out our very modern accommodations at Hotel Metropolitan, ventured out to check out the open markets.

We quickly realized there were far less tourists in Bologna than Venice and after an hour or so roaming the streets surrounding the main piazza, far more American retail stores.

We stopped for lunch at an outdoor cafe near the museum and had our first really memorable meal of the trip. Perhaps not as much as this kid who enjoyed a foccacia sandwich larger than his entire torso. Bon Appetito!

Matt enjoyed a tagliatelle with bolognese and I had a salad with poached egg, asparagus and peccorino cheese with a side of bread and wine, naturally.

That afternoon, we boarded the San Luca Express for a ride along the portico that led up to the Basilica Santuario della Madonna di San Luca overlooking the city. We had originally planned on walking the trip but after hearing it would take two hours to walk the world’s longest portico, we both decided riding was the best decision of the day.

Our stop in Bologna was quick, but we were grateful to experience the University town before heading down to Florence for the next few days and falling even more in love with this beautiful country.

Visiting Venice: Day 2

It’s day 2 in Venice and by now you’ve established that a day well spent begins with a cappuccino and a chocolate croissant.

To give you a little history on Venice. Years ago, ok centuries, the Venetians decided that a big old swamp with a few islands looked suitable for establishment of a city. So the barbarians may have had something to do with it, but after surviving a few plagues and purchasing a lot of flood insurance, Venice became one of the most beautiful, and rapidly sinking, cities in the world.

After breakfast, you hop on a water taxi, or vaparetto, and take a ride out and around the island to San Marco, or St. Mark’s Square. Today, you’re sort of reversing your steps from the airport yesterday, every tiny little step you lugged that brand new but fully-loaded luggage over to get to the hotel.

You determine the ferries are very similar to the CTA and minus the language barrier, feel fairly confident navigating them with little to no conversational Italian speaking skills yet established.

You arrive at San Marco and suddenly realize your hotel is in a much quieter part of town.

It’s a good thing you take way too many photos of gondolas, gondoliers and gondola riders, because you will save yourself 100 Euro when you run out of time to take a ride later that afternoon.

The basilica at San Marco is a must so you climb a steep and narrow staircase to the museum on the upper level where for a small fee they allow you to go out on the marble-tiled roof for a great view of the square. Your legs will tingle the whole time as your new husband leans and stretches himself way too close to the edge.  You make a mental note to adjust your life insurance policy when you return to the states.

By now you’re starving so you wander the winding streets surrounding San Marco until you settle on a trattoria, or rather, you get tired of getting heckled to try said trattorias so you choose the one where they seem to need you the least.

You wrap up your trip in Venice with dinner at another local spot and a quick stop for gelato. Your next few days would determine that the best evenings are ended with gelato and the best food in Italy is not in Venice.

Oh hello there!

Should we try this again? You know that whole I actually login and write stuff down about what’s going on in our crazy life and you occasionally read it, offer color commentary or just secretly binge read a month’s worth of posts like I do with oh so many bloggers?

Truth is its hard to get back to blogging when you’ve left for a while. It’s like skipping the gym. So you miss one day. It’s not that big of a deal if you creep back in the next day. But skip three or more days? Well you might as well put on your sweats and start a monthly pizza and beer subscription because you aren’t leaving your couch anytime soon. Restarting is the hardest part. Which reminds me. I should really get back to the gym.

Where do you start? How do you catch people up on the last few months when more blog worthy events have occurred in a few weeks than you could have ever dreamed of in your blog life?

I’m sure you’ve heard of writers block but when one (well way more than just one) plans a wedding in just under 6 months, executes said wedding at the end of last month and then leaves directly for a honeymoon that took her and her new husband (still sounds weird) through 4 cities in Italy in less than 10 days well then you have the opposite problem. An intoxication of blog content (and red wine and Renaissance Art and bread and gelato).

Don’t get me wrong it’s a great problem to have. We’ve experienced more love and life in the past few weeks than we may for the next four years and we’re completely ok with that.

April Showers

It’s wedding season! Doesn’t it seem like just yesterday we were all getting together for bridal showers and bachelorette parties every other weekend?

Truth is it’s been a while since we all got together to celebrate a wedding. That’s why Matt and I decided to be the last. You know, to build the suspense and excitement.

And to give our friends a chance to go out for a night and leave their kids with grandma and grandpa.

We ventured home last weekend for a weekend full of wedding festivities and Easter celebrations. After a brief pilot strike, new flight schedules and a detour in Chicago, we made it to Springfield around 1 a.m. Saturday morning. This was our third trip home that we arrived after midnight so we’re hopeful that by the time the wedding comes, the travel gods smile down on us instead of pouring their flight delays and traffic jams all over us.

Travel woes behind us, we spent Saturday amidst family and friends and if you ask me, there’s no better way to spend a weekend day. It meant so much to us for both sides of friends and family come into town, something I appreciate so much more living thousands of miles away from them.

My mom and sister handled all of the planning and execution of the shower so while I can’t take credit for any of the details, I did manage to snap a few photos to share with you. I think we both know I’m good for little more than photo posts at this point so here’s a mash-up of the weekend.

We had a great Easter celebration and are continuing the party this week with the boys visiting Florida for their spring break.
